The town is divided into an upper and a lower quarter, connected by several flights of
steps. In the old part of town in the upper quarter, the narrow streets, called pousterles,
center on place Salinis, from which there’s a good view of the Pyrenees. Branching
off from here, the Escalier Monumental leads down to the Le Gers River and the
lower quarter of town, a descent of 232 steps.

North of the square is the Cathédrale Ste-Marie , place de la Cathédrale (& 05-62-05-72-71). Built from the 15th to the 17th centuries, this is one of the
handsomest Gothic churches in the south of France. It has 113 Renaissance choir
stalls made of carved oak. The impressive stained-glass windows crafted by
Arnaud de Moles in the 16th century, are also from the Renaissance. The cathedral is
open daily from 9:30am to noon and 2 to 6pm (until 5pm in winter). Entrance to the
church is free; admission to the choir is 1.50€ ($1.95).

Next to the cathedral stands an 18th-century archbishop’s palace with a 14th-century
bell tower, the Tour d’Armagnac, which was once a prison. Both are closed to
the public.

Le Musée des Jacobins

Located in the heart of the historic district of Auch, Le Musée des Jacobins possesses the second-largest collection of Pre-Columbian art in all of France, second only to that of Le Musée Quai Branly. The museum also offers an exhibition presenting the popular arts and traditions of 19th-century Gascony, galleries of Egyptian artefacts, and Gallo-Roman and medieval antiques as well as paintings and sculptures by artists of the region from the 18th to 20th centuries.

A not-to-be-missed site along the Way of Saint James, listed as World Heritage with UNESCO, the Sainte-Marie cathedral of Auch is among the most recent and largest of any in France — 100m long and 40 m wide — as well as being one of the most interesting. For shops and boutiques, walk down rue Dessoles, rue de Pouille, and avenue de
l’Alsace. Here you’ll find everything from confectionery shops to clothing stores. For
a town of its relatively small size, Auch produces more wines, more fine Armagnacs,
more foie gras, more cheese, more cured ham, and greater numbers of regional delicacies
than a casual visitor might have expected. They’ll virtually leap out of store windows
as you promenade down the commercial streets of downtown Auch (the rue
Dessoles is reserved only for pedestrian traffic, and especially dense with food outlets.)
Three of the busiest and most respected outlets for regional foodstuffs, liqueurs (especially
Armagnacs), and wines are La Cave aux Gourmands, 15 rue Dessoles (& 05-
62-61-81-33); La Cave d’Artagnan, 3 rue de la République (& 06-78-85-05-74),
and Camin Dret, 27 rue Dessoles (& 05-62-05-58-38). Bon appétit!


Hôtel de France (Restaurant Jardin des Saveurs) This is no longer a
mandatory stop in southern France for serious foodies. The hotel is now a solid and
reliable choice, even if its Michelin stars are long lost. It was built around the muchmodernized
16th-century core of an old inn. The rooms are comfortable, conservative,
and furnished with traditional but somewhat nondescript pieces. Some are a bit
dowdy. The cuisine somewhat slavishly follows many of the culinary trends established
by the since-retired founder, André Daguin, but with less panache. Today, with
kitchens directed by Roland Garreau, the cuisine is “innovative within traditional
boundaries.” Lovers of foie gras sometimes look forward to something approaching an
inundation of the velvety substance at this restaurant that lies smack in the heart of
foie-gras production country. Start off, for example, with a platter featuring four different
preparations of the stuff (each prepared with different herbs, spices, and flavorings),
or perhaps some marinated Scottish salmon; followed with a main course with
an entire lobe (meaning a big portion) of foie gras prepared, house-style, with
Provençal herbs and wine. If you’re not in the mood for so much foie gras, consider a
truffled platter of crayfish instead. Set-price menus for both lunch and dinner are
priced from 25€ to 48€ ($33–$62); main courses 21€ to 29€ ($27–$38). The
restaurant is open daily noon to 2pm and Monday to Saturday 7:30 to 9:45pm. During
July and August, its also open on Sunday night.

Most people still head for the Hôtel de France (see above), if only for the memories.
But gone are the days when this housed one of the great restaurants in the south of

Le Daroles TRADITIONAL FRENCH Despite its much, much lower prices, this
Parisian-style brasserie attracts many of the former clients of the Hôtel de France.
Within an old-fashioned setting that includes mirrors, polished copper, mahogany
paneling, and leather banquettes, you can enjoy a bustling, no-nonsense cuisine.
Examples include strips of duckling with seasonal berries, scallops with herb and wine
sauce, sauerkraut, foie gras, and pepper steak.
